Tapestry - Eggs Benedict & French Toast

Everyone is longing for normalcy as we gladly accept the removal of travel and other restrictions but that is not commonly shared as some are still cautious of the risk of being infected, which I think is fair. A visit to the Asian Heritage Row recently reveals that recovery is no where near, a once popular drinking hole for white collar professionals in the city dotted by popular restaurants all around is a far cry from its hey days. Shuttered stores with signs for sale or rental was a scary sight and tell tale sign of how the businesses were pummelled by the lockdown. One of my favorite café for sourdough bread. A limited menu that revolves around the trademark sourdough and croissant but quality ingredients to go with your favorite cuppa. Helmed by bassonist and sound engineer turned baker-preneur, Terence Chong is happy that business is doing well despite the lockdown and is looking forward to the recovery. Terence began his sourdough venture as a partner with Tommy Le Baker circa 2013 and went on his own in another location in Jalan SS17 before moving to this quaint neighborhood in Jalan SS22 just before the pandemic in 2020. During my last visit (4 September 2021), the cafe is still not open for dine-in but it should be soon. Nevertheless, business was brisk with customers making a beeline to order take-always. Vegetarian culture exists in our society, not merely driven by religion but gradually influenced by society’s desire to be healthier and more environmentally friendly. Eating meat indirectly commits oneself to taking away a life, which brings about potential karmic retribution according to Buddhism. Scientifically, it would also mean ever growing demand for livestock and destruction of our natural environment and resources to accommodate its growth which leads to deforestation and global warming. So, if everyone converts to vegetarianism wouldn’t the world be saved and we will be living guilt-free? 😆 If dedicating oneself to vegetarianism brings such liberating moral happiness, why stop there? Go further to deny mock meat and achieve the purity of conscious. Missing Korean BBQ?

  After binging on K-drama this entire duration of MCO4.0, my craving for Korean BBQ is beyond suppression. Dining-in is still not permitted and I just have to improvise to satisfy my appetite for samgyeopsal lettuce wrap . It’s easy. Don't have a Korean BBQ grill? Just grill the pork belly on a normal pan. Cut the pork belly strip to about 1cm thick so that it cooks quicker. Marinate with a bit of salt. Add a drizzle of oil onto the pan and sear the meat for about 4 minutes on each side. The fat from the pork belly will dissolve as you grill. Brown some sliced garlic or onion in the melted lard, which you can add to your lettuce wrap later. Once the meat is slightly brown on both sides, use a scissors and cut the meat into bite size chunks. Saté for a few more minutes And it’s ready. For lettuce, I use romaine.
